Mexico Sierra Mixe

We are so excited to bring another Mexican coffee from Red Fox to our lineup. Red Fox has deep roots in Mexico and sources excellent coffees year after year - this one is no exception. Look for peach sweetness and notes of spiced pear and cacao nibs. 

Here's a detailed look at the Santiago Atitlan producer community from our importing partner, Red Fox:

Nestled in Oaxaca’s remote Sierra Mixe district, Santiago Atitlan is a land of dense forests, cooling mists, and rich volcanic soil. Here, smallholder farmers cultivate Typica and Bourbon varieties at altitudes of 1,400–1,600 meters, using traditional, sustainable methods.

Farms are tucked high in the mountains, accessible only by foot or mule. Producers ferment their coffee in wooden tanks for up to 20 hours and sun-dry it for 8–10 days, ensuring meticulous quality. Shade trees like ice cream bean and avocado not only protect the coffee plants but also enrich the ecosystem.

Deeply rooted in Mixe culture and tradition, Atitlan’s farmers take pride in their craft, striving for excellence year after year. Since 2021, our partnership has grown as more producers join us, bringing exceptional coffee that we’re thrilled to share— from first fruits to final roast.
