Rwanda Fugi Aphrodise (Low Oxygen Natural)
Another beautiful coffee from producer Emmanuel Rusatira that we sourced through our friends at Sundog Trading, the Fugi Aphrodise packs a punch of sweet vanilla and ripe, juicy strawberry. These experimental lots from Emmanuel are always among our favorites of the year - we’re sure you’re going to love it too!
TASTING NOTES: Strawberry, Vanilla, Candied Ginger
This experimental process begins with intensive sorting under shade to select the ripest cherries and remove defects, followed by floating to separate denser cherries for higher-grade lots. Top-quality cherries ferment for 40 hours in sealed tanks under low-oxygen conditions, enhancing yeast activity and fruity flavors. After fermentation, cherries dry on raised beds, alternating between sun and shade to extend drying over 45 days. This method, likened to slow cooking by Emmanuel, enhances sweetness, complexity, and flavor longevity. He believes slow drying, like slow cooking, produces a more cohesive, flavorful result compared to quicker, sun-dried methods.
